Smoked Balsamic & Thyme Carnaroli Risotto
A creamy Carnaroli risotto infused with Sicilian thyme and finished with a drizzle of smoked balsamic glaze.
Ingredients:
1 cup Riso Carnaroli Classico
3 cups vegetable or chicken broth (warm)
1 small shallot, finely chopped
2 tbsp olive oil
1 tbsp butter
1 tsp Sicilian thyme
1 tsp Fine Sea Salt
1 tbsp Crema di Balsamico (Smoked Balsamic Glaze)
Instructions:
In a saucepan, warm the olive oil and butter. Add the shallot and sauté until translucent.
Stir in the Carnaroli rice and toast for 2 minutes.
Add 1⁄2 cup of broth and stir until absorbed. Continue adding broth gradually.
When creamy and al dente, season with Fine Sea Salt and Sicilian thyme.
Drizzle with smoked Crema di Balsamico before serving — it adds a rich, smoky sweetness that balances the earthy thyme.
