Creamy Pesto Risotto

Ingredients:

  • 1 cup Riso Carnaroli Classico

  • 3 cups vegetable broth

  • 2 tbsp butter

  • 2 tbsp Pesto Bianco

  • Pinch of Fine Sea Salt

    Instructions:

  1. Cook risotto as in recipe #1, omitting thyme and balsamic.

  2. When creamy, stir in Pesto Bianco and butter.

  3. Adjust salt and serve — rich, nutty, and perfectly Italian.
