Strawberry and Fennel Salad

Ingredients

1 cup of strawberries, quartered

½ fennel bulb

1 tbsp Sale Fino

3 tbsp Condimento Blanco, divided

3 tbsp Chianti Classico olive oil

2 pieces of burrata

1 cup arugula

Toasted pistachios

Peach Balsamic Pearls

Method

1. Thinly slice the fennel, a mandolin is a great way to get very thin slices.

2. In a bowl, whisk 1 tbsp salt and 1 tbsp Condimento Blanco together

3. Add the fennel, and mix to incorporate. This will be a quick pickle for the fennel to make

it more tender and flavorful. Allow to sit for 15 minutes.

4. While the fennel is resting, cut the strawberries and toast the pistachios.

5. To make the dressing, take one tbsp of the fennel liquid (as the fennel sits it will release

water into the bowl) and 2 tbsp Condimento Blanco. Slowly stream in the olive oil while

whisking. Taste and adjust seasoning as desired.

6. Discard the rest of the fennel liquid, and mix the fennel, arugula, and dressing together7. To plate, start with a base of the arugula salad, then add the strawberries, burrata,

pistachios, and balsamic pearls.
